Well, first time for everything.

I was at dinner at a lovely Chinese restaurant with James before seeing Noises Off at the Sydney Theatre Company at the Opera House. James was craving a steamed fish. He ordered the coral trout from the Great Barrier Reef.

Out comes the waiter with the fish in a bag. Alive. Just pulled out of the tank.

About forty minutes later, out comes the freshest cooked fish I’ve ever had. They debone it for you and serve it up. Steamed to perfection in a light sauce of ginger and shallots. Coral trout.

So, so good.
